getting ready for the big day





Lace cookies. I wanted to make them for a looong time.
In the end I found those two recipes, tried and tested. Both are fine but not great for those tine little greedy hands as they are so fragile. Pretty to look at too. 


Oatmeal Lace Cookies

1/2 cup melted butter
2 1/2 cups rolled oats
1 cup brown sugar
2 tsp baking powder
1 egg, beaten


Melt butter, add dry ingredients. Add egg, mix well. Drop from spoon wide apart on parchment paper. Bake 8-10 minutes in 200 degrees until edges are brown. Let stand for 3 minutes, so they harden up, then remove from the tin.




Nut Lace Biscuits 


1/3 cup heavy cream
3 tablespoons white sugar
1/3 cup flaked almonds or chopped hazelnuts
1/4 lb. candied orange peel
1/4 cup flour


Preheat oven to 200 degrees. Stir together the whole lot. Line tins with baking parchment, drop the batter onto it by the teaspoonful, spacing well apart as the batter spreads. Bake for 10-15 minutes, though watching carefully as these cookies burn easily! Let cool on the cookie sheet for about 10 minutes, then move to a cooking rack to cool completely.
